"Zio Tobia" is an inn located in the historical center of L’Aquila, inside a palace from the 17th century recently restored. It is a traditional inn with a refined location where tradition and modernity meet in harmony. The menu present simple, traditional, and refined dishes.
Here you will find fritter with prosciutto, the famous olive all’ascolana (olives stuffed with meat and deep fried), and deep-fried cheese. The selection of cold cuts and cheeses come from the small farms around the provinces of L’Aquila and Teramo.
One of the best dishes to try is the “bruschetta of Zio Tobia”: the bread, highly digestible, is made with stone-ground whole grain, following a recipe that calls for a long and slow fermentation. On top of this bread, you will find delicious toppings that try to shine a light upon the season, biological, and local ingredients.
